I’m a big fan of fruit salads – especially if it has watermelon!
Not a big fan of summer. I’m an autumn person. But my watermelon salad can change a humid, miserable day into heaven.
The last time I made this for a family party, my sister-in-law’s friend demanded my recipe. “Why does this watermelon salad taste so amazing??????”

It’s not my culinary talent. I credit Samin Nosrat and her brilliance.
See, watermelon is super-sweet – as you know. So, without a little tweaking, it’s just a bowl of water-sugar. Boring!
You need some sour to offset the watermelon.
So…
Cut up 1/2 a watermelon.
Grate 1-2 lemons. Add the grated peel to the watermelon in the bowl.
Squeeze the lemon juice from both lemons into the salad. Use a strainer to avoid getting pits in the salad.
Add blueberries or raspberries. You can add strawberries (I’m not a fan – they get all mushy and yuck.)
Cut up 6-10 leaves of either mint or lemon balm. Add to bowl.
Mix well. And let it sit overnight. All the flavors meld nicely after 8-10 hours.
Yum!
And…on a side note. DON’T ADD SUGAR. If you are adding sugar, you have a serious diabetic issue ahead of you. The watermelon and berries have plenty of sugar.
